Go bananas for breakfast with these super hearty waffles! the recipe is gluten free and vegan, but there’s no compromise in deliciousness – these are the crispy, fluffy, tender waffles of your dreams! Peanut Butter Banana Waffles
1 2/3 cups buckwheat flour
2 ripe bananas, mashed well
1 1/4 cups almond milk
2 Tbsp peanut butter
1 tsp baking powder
1 Tbsp coconut oil
1 Tbsp honey
Combine all ingredients in a food processor and blitz until smooth. If it’s very thick add a bit more almond milk a tsp at a time until you reach the consistency you want.
Brush your waffle iron lightly with oil, then pour 1/4 cup of batter in each side.
We let ours cook for 2 minutes, but each iron will be a bit different!
